Bananas are known for being an excellent side dish for breakfast and dessert. In the morning, you can top your bowl of cereal, a plate of waffles, or a cup of yogurt with a few sweet slices of bananas. In the evening, after dinner, you can treat yourself to a banana split or a frozen banana pop coated in chocolate. It can’t go with everything. But what it does goes with, it goes with it very well.
But maybe you’re a rebel.
Maybe you don’t adhere to time and like having breakfast for dessert or the other way around. Well, what if you could throw your culinary caution to the wind and create something that can be eaten as breakfast and as dessert at the same time?
You can follow this recipe for a banana-and-coffee-flavored pancake cake from a Turkish YouTube channel.
You’ll need three whole bananas, instant coffee, eggs, milk, cream, flour, walnuts, and marshmallows. Slice each banana into half-inch pieces into a bowl, then add your two eggs. After that, add in one tablespoon of instant coffee. Once all the ingredients are in your bowl, blend them until left with a thin paste.
Take 300 milliliters of cold milk and three tablespoons of sugar and whisk into the mixture before gradually adding 240 grams of flour. Mix it all until you have what is essentially a banana-coffee pancake batter.
On a skillet or a pan, take the batter and make three pancakes on low heat with 3-5 minutes of cooking time for both sides.
Set the pancakes aside once cooked on both sides. In a separate bowl, mix 200 ml of milk with 150 grams of powdered cream. Mix until it is thick and fluffy, and use it as a frosting. Stack the pancakes on top of one another with a thick layer of cream in between.
Then cover the entire cake with cream and smooth it out to the best of your abilities. You can use a spatula.
Don’t forget to add some decorative flair!
A cake has to be sweet on the eyes as well as the tongue. Take four tablespoons of crushed walnuts and press them against the side of the cake. Once it’s completely covered, take an assortment of marshmallows and sprinkle them on top. And finally, after all that prepping and baking, you end up with a mouthwatering dish anyone can enjoy at any time.
You can make this at home and serve it at parties as a cake substitute.
