We may have seen many Caramel Custard Pudding recipes, but there is something about this one that makes it really appealing.
Maybe, because it’s really simple to make, and it looks gorgeous!
See for yourself.
For the caramel:
- 1/3 cup of sugar
- 1 Tblsp. of water
For the pudding:
- 3 Egg yolks
- 3 Whole eggs
- 2 cups of milk
- 1/2 cup of sugar
- 3/4 cup of heavy cream
- 1 teaspoon vanilla extract
- Hot water
Step 1. The first thing to prepare is the caramel. It’s really very simple to do.
In a pot, put your sugar and water. Then cook over medium heat until it achieves the desired color.
Step 2. Pour the hot caramel on your glass molds or ramekins. Though it all depends on you if you will use other molds.
Step 3. Let us create the yummy custard. In a bowl, prepare your egg yolk and whole eggs. Whisk until well combined. Set it aside.
Step 4. In a pot, pour your milk and sugar. Then add your heavy cream. On medium heat, constantly stir your pudding until you see it foaming at the edge of the pot. Remember not to boil it because it will cook your eggs!
Step 5. Turn off the stove once you achieve the right temperature.
Step 6. Slowly pour your milk mixture into your eggs. Slowly do this step or you’ll end up with scrambled eggs!
Step 7. Add your vanilla extract.
Step 8. Now, strain the mixture. Once done, you can start pouring it on your molds.
Step 9. Place the molds on your baking tray and pour hot water till you reach 1/3 to 1/2 of the molds.
Step 10. Bake your pudding at 300℉ for around 40 – 50 minutes. Once done, let them cool.
Step 11. Refrigerate for three to four hours. Serve chilled.
Tips from Nino:
- Don’t overfill the molds, instead, use 80 – 100 ml molds.
- For baking, use trays that have tall sides.
- Baking time will depend on your molds.
- No oven? Don’t worry. You can steam these yummies using the lowest heat you have.
Look at that jiggly deliciousness! We’re pretty sure your family and friends would love it.
