- No Bake Macaroni & Cheese
That’s right, I said it, there’s no baking involved for this mac and cheese recipe. All you need for this dish is low-fat milk, 3 tablespoons of flour, garlic powder, dijon mustard, cheddar and parmesan cheese.
Heat 1 1/2 cup milk over medium-high heat. Whisk in another 1/4 cup milk, flour, garlic powder, and some salt and pepper to taste. Whisk constantly until the mixture is thickened, about 2~3 minutes. Remove from the heat and mix in the cheese and mustard until the mixture is melted together.
Cook your choice of pasta according to the directions on the box. Add in the broccoli and stir until both are cooked tender. Drain when done, and add it in to the cheese mixture. Put on medium heat and cook through for about a minute. And that’s it, you’re done! Quick, easy home-made mac and cheese with some broccoli to add that healthy bonus.
2. Chicken and Broccoli Rice
This is a really simple and hearty dish that only takes 20 minutes! For this recipe you’ll need: Bite-sized chicken pieces, a can on condensed mushroom cream soup, shredded cheese, and instant rice.
Cook the chicken on medium-high heat, or until evenly browned. Add in the broccoli, soup, and 1 cup of water. Stir in the instant rice and the cheese. Cover and let it simmer on low heat for 5 minutes. And there you have it! An easy, delicious, healthy meal that everybody will love.
*Here’s a tip: To make the meal even more healthy, use white meat chicken breast.
3. Five Ingredient Brocoli and Cheddar Soup
Have you ever tried the broccoli and cheddar soup from Corner Bakery? I never knew that making this dish at home could be so easy! You only need 5 ingredients: Broccoli, carrot, sweet red onion, low sodium chicken broth, and evaporated milk.
Slice the broccoli and carrot into 1 inch pieces. Chop 1/2 of a red onion into small pieces and place it in a large pot over medium heat. Stir for about a minute, and then add in the rest of the vegetables. Cook for about 10 minutes. Then add in the 3 cups of chicken broth. Bring to a simmer and cook until the broccoli is soft and tender. Remove from heat and let it cool for about 2 minutes. Then transfer the soup into a new clean pot and stir in the evaporated milk. Now you have yourself a creamy, warm, and cheesy soup that won’t leave you feeling completely guilty.
4. Roasted Parmesan Broccoli
This is a great simple recipe that’s perfect as a snack, or paired together with a meal. All you need are 4 garlic cloves, red pepper flakes, parmesan cheese, lemon zest, and olive oil.
Preheat the oven to 425 F degrees. Add sliced broccoli to a parchment paper-lined baking sheet. Sprinkle with red pepper, olive oil, and salt and pepper to taste. Roast for about 10 minutes, and then add in the sliced garlic. Bake for about 6 more minutes, then sprinkle the parmesan cheese on top. After baking for another 2 minutes, serve it on a plate and dust on some lemon zest.
5. Beef and Broccoli
Who knew that this classic Chinese take-out dish could be so easy to make at home? For this recipe, you’ll need a pound of round steak, cornstarch, vegetable oil, an onion, soy sauce, and brown sugar.
In a large bowl, mix in 2 tablespoons of cornstarch, 2 tablespoons of water, and a teaspoon of garlic powder. Add in the sliced beef. Move the seasoned beef into a large skillet, toss in vegetable oil, and and stir over medium high heat. Add in the broccoli and the onion and stir for 4~5 minutes. Add in soy sauce, brown sugar, and 1 tablespoon of cornstarch. Serve this dish on a plate of hot rice, and simply enjoy!
