5-Minute Breakfast Tortilla

You’ll need the following ingredients:

  • 4 medium-sized eggs
  • A pinch of salt
  • A pinch of black pepper
  • Green onion
  • 2 Tortillas
  • Mozzarella cheese
  • Bacon crumbles
  • Spinach
  • Tomato
  • Cheese slices
  • Unsalted butter

Crack two eggs.

Add a pinch of salt and pepper, and whisk. Chop your green onions and mix them with the eggs.

Heat your pan on medium-low heat and add your unsalted butter.

Add scrambled eggs and then top with one tortilla.

Once cooked, flip your egg and tortilla and add your mozzarella cheese, spinach, and sliced tomatoes on one side.

Top with cheese and flip.

Place unsalted butter on the empty part of the pan and flip your tortilla.

Wait for your tortilla to cook, and you are done. Repeat the process with the other tortilla, but this time, add bacon crumbles.

Toasted Tortilla Sandwich

You’ll need the following ingredients:

  • Tortilla
  • Tomato
  • Spinach
  • Bacon crumbles
  • Tomato sauce
  • Avocado
  • Mayo-style sauce
  • Cheese
  • Olive oil
  • Lemon juice
  • Salt
  • Black pepper

Get your 23cm tortilla and fold it twice, making four equal parts.

Cut halfway through the middle.

Get half of your avocado and mash. Add a pinch of salt and pepper and squeeze some lemon juice.

Spread your avocado in one part of the tortilla. On the second part, spread your mayo sauce or any sauce you prefer.

Add tomatoes on the third part and cheese on the fourth.

Starting with the avocado, fold your tortilla until you have a pocket sandwich.

Repeat the process on another tortilla

In the first part, add tomato sauce.

Add spinach on the third part, and bacon on the third.

Finally, this tortilla recipe won’t be complete without cheese.

Fold until you have a pocket tortilla.

Using a skillet and some oil or butter, pan-fry your tortillas to desired crispiness. Enjoy!

Tortilla Shrimp “Brunch” Sandwiches

You’ll need the following ingredients:

  • 2 Tortillas
  • 2 medium-size eggs
  • A pinch of salt
  • A pinch of black pepper
  • 10g Green onion
  • Shrimp
  • Avocado
  • Mayo-style sauce
  • Mozzarella cheese
  • Olive oil or butter

Crack two eggs.

Add a pinch of salt and pepper. Beat well.

Finely chop your green onions and shrimp. Then put it in your egg mixture.

In a skillet under medium heat, add olive oil and add your eggs. Scramble the eggs and set aside once cooked.

Get your tortilla and apply your mayo at the center.

Add shrimp and egg mixture.

Get your avocado and thinly chop them. Place it on top of your tortilla. Add a pinch of salt and pepper.

Don’t forget to add your cheese.

Fold into a square sandwich and set aside. Repeat the process for the second sandwich and toast as desired.

The “Denver” take on tortilla sandwiches

You’ll need the following ingredients:

  • 4 tortillas
  • 1 diced potato
  • Diced onion
  • 30g red bell pepper
  • 10g green onion
  • salt and pepper
  • paprika
  • tomato sauce
  • shredded cheese
  • Olive oil
  • unsalted butter

Wash, peel, and dice your potatoes.

Place them in a bowl, add water, and cover with plastic wrap. Don’t forget to poke holes in the plastic wrap. Microwave for 4-5 minutes.

Once done, remove the plastic wrap and mash the potatoes. Add salt and pepper and mix well.

Heat your skillet and add your unsalted butter. Once melted, add your chopped onions.

Add salt, paprika, and curry powder. Mix well.

Once your onions are translucent, you can now add the chopped red bell peppers. Mix with the mashed potatoes and add chopped green onions. Mix well.

Get your tortilla and spread your tomato sauce. Add cheese on one side and then the potato mixture. Top with cheese and fold.

Heat your pan on medium heat and panfry your tortillas until you achieve your desired crispiness.
