As a kind of special occasion dish, bread stuffing is pretty underrated. We all have our own preferences when it comes to how to prepare it—some of us like to go all out and make a homemade version while some of us couldn’t be happier with the simple Stove Top version. Although we all generally look forward to eating it on Thanksgiving, we usually don’t use it much in our cooking the rest of the year. And we’re taking a stand against that.
Stuffing is an absolutely delicious side, no matter what time of year it is. Beyond that, we have an incredible way to make it that you may have never tried before. The preparation couldn’t be easier as it uses a slow cooker and it only consists of four ingredients. Still, the result is a warm, savory and creamy dish that you can eat as a main course (or snack on throughout the day). Get ready, everyone. Today, we’re making slow cooker chicken with stuffing using only four ingredients.
Here’s what you’ll need:
- 4 boneless and skinless chicken breasts
- 1/2 cup of no-sodium chicken broth
- 1 can of cream of mushroom soup
- 1 6-ounce box of stuffing mix
- 1/4 cup of water
- chopped fresh parsley
Here’s what you do:
1. If you haven’t already, start by taking your chicken breasts out of the package and seasoning them to your liking with salt and pepper. Don’t be afraid to use too much salt since your broth should have no sodium in it! Once they’re trimmed up and ready to go, place them in your slow cooker. Pour your chicken broth over the chicken as well.
2. Next, start preparing your stuffing. Get a large bowl and add in your dry stuffing and water with your can of soup. Use a spatula or a wooden spoon to stir everything up until all the ingredients are well-incorporated.
3. When your stuffing is ready, dump the bowl into the slow cooker and use your spatula or spoon to evenly spread the mixture in a layer on top of your chicken. After it’s ready to go, cover the slow cooker and set it to cook on high for four hours.
4. After the time is up, open it up and check to make sure that the chicken breasts have cooked all the way through. If you’ve followed all the steps correctly, the result should be perfectly moist chicken breasts in a kind of stuffing soup! Serve hot and enjoy.
As you can see, this recipe provides a slight twist on the usual way we’re used to seeing stuffing used. On Thanksgiving, stuffing goes inside the turkey but it’s also somewhat of a standalone side dish. In this version, we’re swapping out the turkey for some chicken breasts and fully incorporating the stuffing into a kind of gravy or sauce. Be sure to check the flavor at the end to see if you need to add any more seasoning and top it all off with some freshly chopped herbs—parsley works particularly well.
Feel free to experiment with this recipe by using different kinds of soup or adding in some vegetables or other ingredients you like in your personal stuffing recipes. Above all, we hope this recipe will show everyone that stuffing isn’t only for Thanksgiving and can be used in interesting ways.
