What makes this cake so magical, you may wonder? On the outside, it may appear to be just another ordinary pound cake. In fact, the cake seems a little thin. But when you slice into it, you’ll be shocked to discover that there’s actually three different layers: a fudgy base, a custard center, and a sponge cake top. Yes, that means that one batter can produce three layers of cake. You don’t need to say any magic words or any aces up your sleeve – just follow our recipe below and voila! 1 pan will magically produce 3 layers of sweetness.
INGREDIENTS:
- 3 egg, yolks and whites separated
- 1 tablespoon water
- ⅓ cup + 2 tablespoons sugar
- 6 tablespoons melted butter
- ¾ cup flour
- 1 teaspoon vanilla extract
- Pinch of salt
- 1½ cups milk
- Confectioners’ sugar
DIRECTIONS:
Preheat your oven to 302°F and grease a 7-inch round pan.
Separate your yolks from your whites and place them in separate bowls. In a large bowl, add the yolks, water, and sugar. Using a whisk, gently break the yolks and mix until mixture becomes a pale yellow color.
Gradually beat in melted butter until well mixed. Sift flour, then mix well. Add in vanilla extract, and salt. Pour in milk while beating until batter is thin and foamy.
In a separate bowl, mix egg whites furiously until thick and foamy. Add the egg whites into the batter until just incorporated. Be careful not to overmix.
Pour mixture into cake pan. The batter should be extremely thin, with lumps from the egg whites. Bake for 50 minutes, until top is golden brown and you can press into it. Top it off with confectioner’s sugar for the final touch.
