How much do you love peanut butter? If you’re anything like the rest of us, peanut butter is pretty irresistible as a tasty snack on a sandwich, crackers or even just with a spoon when you’re hungry. Still, you can take this tasty ingredient to the next level by using it to cook some tasty baked desserts. Chances are you’ve had peanut butter cookies in the past and you think they’re delicious, but today we have a special recipe for you. We promise you haven’t had peanut butter cookies quite as good as these.
Though everyone’s personal recipes may vary, today’s recipe has stood the test of time and is a very old fashioned way to make these cookies that keeps things super simple. The recipe only uses three ingredients and couldn’t be easier to put together. Fortunately, it’s still just about as delicious as it comes. So without any further ado, let’s get started.
Here’s what you’ll need:
- 1 cup of sugar
- 1 cup of peanut butter
- 1 egg
Here’s what you do:
1. To start, preheat your oven to 350 degrees. In the meantime, get a big mixing bowl and put your three ingredients in it, mixing them all up until they turn smooth.
2. After that, get out a Silpat or a baking sheet lined with parchment paper. With your batter made, all you have to do is scoop it out and roll it into roughly one-inch balls with your hands. Place them on the mat and press each one down flat with a fork in both directions to make a criss-cross pattern. Because these cookies don’t expand much at all, you can place them very close to one another!
3. When the oven is ready, pop the cookies in and let them bake for about 12 minutes. After it’s done cooking, let them cool on the tray for a minute or two before moving them over to a wire rack to let it finish cooling. Wait until they’re cool enough and dig it or store them in an air-tight container in the fridge for later eating!
As we said, this recipe couldn’t be more simple or more delicious for peanut butter lovers. As always, there is some room to innovate within the recipe for different flavors and textures. If you’re looking for a smoother, less dense cookie, take a couple tablespoons of peanut butter out of the full cup you’re using for the recipe. Similarly, you can also use an additional egg to add a little more softness to the end result. Still, if you end up thinning out your batter, the criss-cross fork technique may not apply anymore.
On the other hand, you can use the basis of this recipe and add in some other tweaks as well. If you like a cookie with some more texture to it, consider using some chunkier peanut butter as well. If you want a little additional spice or flavor, consider adding some cinnamon or some nutmeg as well! Ultimately, the choice is yours—and you really can’t go wrong with this recipe.
