Make 3-ingredient chocolate ice cream without an ice-cream maker

If you’re craving ice cream and don’t want to run to the store, worry not, my friends. This is just the ice cream recipe for you.

Before you catastrophize over not buying that dang ice-cream maker to save on storage- you’ll be happy to learn that it’s not even necessary. Neither is the rock salt, sugar, or eggs, in fact!

That’s right- this recipe is not only defiantly delicious, but it’s also on the healthier side, too.

And did we mention it’s one of the easiest things in the world to make? No?

Well, then, let us introduce you to this recipe for 3-ingredient chocolate ice cream (no machine necessary)!

This delectable frozen dish comes to us from the ever-clever recipe hacker, Nino. He runs a channel on YouTube called Nino’s Home and we highly suggest you check it out if you’re a fan of sweet treats and nifty food hacks.

This is definitely one of his more popular ones and for good reason- it’s all about the ice cream!

As we said, the recipe is pretty darned simple and you really only need a few things to get started.

Here is what you will need:

  • 1 2/3 cups of whipping cream (we like heavy, but it’s up to you)
  • 5 oz. (or 5/8 a cup) of sweetened condensed milk
  • 1/2 a cup of cocoa powder

And that’s it for the ingredient. These 3 simple things that you likely already have on hand are all you’ll need to whip up a batch of this soft, chocolaty ice cream.

Step 1- whisk

You’ll start by pouring the whipping cream into a large mixing bowl and whisking it rapidly. Make sure to bring the whisk relatively close to the surface to create air bubbles that will get whisked into the whipping cream and help set it up.

Keep whisking until the cream begins to thicken up. This can take quite a while sometimes, so, if you have an electric mixer or a stick blender, now would be the time to use it.

Eventually, after enough whipping, your cream should form a soft peak when you pull the whisk out of it. Like this:

Step 2- pour in the goodies

Next, you’ll go ahead and pour all of your sweetened condensed cream right on top of the whipping cream.

Then, add your cocoa powder into the mix.

Are you ready? We’re halfway there folks!

Step 3- mix

After you’ve added the condensed milk and the cocoa powder to your fresh whipped cream, grab that whisk again and get mixing!

The ice cream “batter” will be thick, so you will actually do more folding than whisking at this point, but you get the hint.

Just keep whisking and folding until your chocolate ice cream mixture takes on a uniform color and there are no lumps left in it. Like this:

Basically, it should already have the look of soft-serve chocolate ice cream. And once it does, you’re ready to move onto the next step. Brace yourselves- this is the hard part.

Step 4- Freeze it

Use a spoon or a spatula (a spatula works best) to scrape the ice cream mixture out into a loaf pan or other metal or glass receptacle.

Then, cover the whole thing with plastic wrap. Press the plastic wrap down lightly until it touches and covers the entire top of the ice cream, making sure there are no air pockets that can get to it. This will help prevent “freezer burn”.

Once it’s covered, just pop it in the freezer for at least 4 hours.
